〈材料〉2〜3人前
鶏むね肉 1枚(約350g)
◻︎ゆで汁
水900ml
鶏がらスープの素 大さじ2
にんにく1かけ
青ねぎ1本
〈作り方〉
①鶏むね肉は厚み半分に切り、火が通りやすくする。
②蓋つきの鍋に水、鶏がらスープの素、皮をむいて潰したにんにく、青ねぎを加え、火にかける。
③沸騰したら火を止め、(①)の鶏むね肉を入れて蓋をして10〜15分置く。
④火が通れば鶏肉を取り出し、密閉容器にゆで汁と共に入れて粗熱をとる。
⑤粗熱が取れたらお好みの大きさに切り、お好みのタレやソースを付けてお召し上がり下さい。
・残った鶏肉はゆで汁に漬け

・残った鶏肉はゆで汁に漬けたまま冷蔵庫で保存して下さい。(3日間保存可能)
・残ったゆで汁はお好みの具を入れてスープなどにお使いください。
〈ポイント〉
・鶏むね肉は厚みを半分にする事で加熱時間を短縮し、均一に火が通ります。
・沸騰して火を止めたゆで汁に浸けて余熱で火を通す事で、しっとりと柔らく仕上がります。
※肉の繊維がゆっくりと熱を受け、柔らかく、しっとりとした仕上がりになります。この方法は、肉を直接高温で調理するよりも、水分を逃さずに済むためです。
〈補足〉
•鶏がらスープの素がない場合は、塩小さじ1と醤油小さじ1で代用して下さい。
